Lemon Chicken Soup

 

 

This is an easy and savory soup. It is great for breakfast, lunch, or dinner. You can add spices or other vegetables if you choose.

The base is your homemade chicken broth ( meat or bone stock). You can add chicken thigh meat or breast meat and while simmering you can slowly incorporate eggs.

For two people you will need:

4 cups chicken meat or bone stock

1 cup shredded thigh or breast meat

2 eggs in a separate bowl whisked together well

Extras: green onions, thinly sliced peppers, any vegetable, sauerkraut, hot sauce…

In a pot heat the broth and chicken. When full heated remove from the heat and slowly stream in the whisked eggs while stirring the mixture. Serve! Really that easy!
