Quick Weeknight Meatballs


Meatballs are easy and quick for weeknight meals. Here I have served them over a bed of kale that was sauteed in avocado oil with a bit of garlic powder and topped with Newman’s organic vodka sauce.

You will need:

1 pound ground meat ( beef, turkey, chicken, pork)

1 small onion chopped fine

2 eggs

1 teaspoon oregano, parsley, and chili flakes ( if you like heat)

salt & pepper to taste

You can add parmesan cheese to the mix about a half of a cup or you can cube up cheese and insert the cubes into the center of the meatballs. Mix all the ingredients with your hands and don’t over mix, just incorporate all the ingredients together. I use a large soup spoon to gather some of the mixture and gently form a ball in my hand. I place all the meatballs in a baking dish. Place in the oven at 350 degrees. They take about 20 minutes or until your thermometer reads 165 degrees. The time can vary depending on the size of your meatballs, smaller ones take less time.


You can mix up the spices in this meatball recipe to make it versatile. You could add these meatballs to soups, salads, or eat them a la carte. If you find that the consistency is not holding together well you an add paleo flour, GF flour, flour, or oats. The egg and addition of cheese usually works well.
