Kimchi or Kraut with Eggs

I find the freshness of kimchi or kraut paired with the warm creaminess of eggs delicious. It also makes a quick and healthy breakfast/lunch/dinner. I always have a rotating variety of krauts or kimchi in my fridge. While I cook my egg I put my kraut or kimchi on a plate to come to room temperature ( this is important not to kill all the good gut bacteria alive in your kraut/kimchi). I love runny yolks for the flavor it adds to any dish. I feel it adds depth as well. I have been really excited about sprouts and the powerhouse of nutrition these tiny sprouts offer. I add them to anything and everything. Pictured here are kale sprouts.  Other additions may include avocado, toast, sliced and toasted yam rounds, or all this goodness rolled up in turkey slice! Have fun and play while feeding your gut and body!
