I have the privilege to live where artichokes are grown. In fact, many of neighbors grow them and they can be found at local farmers markets year around. One thing to keep in mind with artichokes is that ones that look roughed up or a little brown on the edges have usually been exposed to frost. This is a GOOD thing! Frost “kissed” artichokes have a more intense flavor and when cooked that peeling brown look goes away. You are left with artichokes full of flavor and beautifully green.
