Sweet Potato Chips


I can not say NO to a potato chip! I decided instead of giving into cravings I would take the time to honor my craving and feed my craving with a nutritious version of the processed thing we are all used to eating.  This way I can control the ingredients; organic sweet potatoes, kosher salt, and ghee.

I thinly sliced my potatoes with a knife. The thinner you can do this and be consistent they will cook evenly. I gently massaged the ghee all over the sweet potatoes and placed on a cookie sheet in one layer. I baked them at 400 degrees for 18-25 minutes. You do not want them to burn but a little browning is a good thing. I sprinkled with salt as soon as they came out of the oven. YUM!
