I had leftover sautéed collard greens so I decided to warm them up and add two eggs. Pastured eggs are a great source of protein. I love to top mine with any of an assortment of hot sauces we have accumulated. This took me five minutes top but will keep me satiated all morning! Leftovers make great additions to quick egg scrambled in the morning. Don’t toss those last two scoops of vegetables!
