Quick Sautéed Kale

I love Kale!


I love that it is filled with vitamins and minerals. I love that you can eat it raw or cooked. I love that it can be a great meal in 10 minutes. Here is a quick meal or side dish.

You will need:

2 bunches of kale 

4 garlic cloves ( thinly sliced)

2 tbs ghee ( you can use avocado oil or other high heat oil)

pickled onions (optional but very tasty)

Method: Wash kale and remove the stems. I like to roll all the leaves together like you would a tortilla and then thinly slice. This leaves nice ribbons of kale. In a large fry pan over medium-high heat add your oil or ghee. When hot add the kale and place a lid on the kale for 3 minutes ( allows it to soften and very slightly steam). After three minutes remove the lid, mix up all the kale and add thinly sliced garlic.  When the garlic is browned, about five more minutes moving the kale and garlic regularly, remove from heat. You will want to serve immediately so don’t cook this dish until the rest of your meal is done.

I topped with pickled red onion here and some crumbled leftover bacon I had in the fridge. Pickled red onions are a weekly staple in our household. They add a bite to any dish and can cut through heavier dishes or meat.
