Revitalize your health with mineral and vitamin rich vegetable broth.

As promised here is my revitalizing vegetable broth recipe.

You will need:

1 bunch kale

1 leek or two spring onions ( not scallions)

3 carrots

3 celery stalks

dried shiitake mushrooms 1 ounce

1 winter squash ( kombucha, butternut, acorn)

1 sweet potato 

knob of ginger

know of turmeric

3-5 cloves garlic

large piece of kombu dried seaweed

1 bunch parsley

In a large pot or your pressure cooker ( which I used) roughly chop everything and put into pot. Cover with filtered water. Bring to a boil. In your pressure cooker cover, seal, and cook on low for 20 minutes. If you are using a large pot cover and simmer for 45 minutes.

Strain and store.

I take all the strained veggies and puree in my high powered blender or a food processor. I then place in small containers to freeze in one cup measurements. I use this in soups, casseroles, and you can add to sauces or chili for extra nutrients.
