Buttermilk Soaked Pancakes/Waffels

Pancakes/Waffles are a requested breakfast item daily. I have a sourdough starter that usually is my go to for the best pancakes/waffles. However, in a pinch while traveling or to change things up I have used buttermilk to soak my flour in over night that makes a pretty mean pancake/waffle. I am a HUGE supporter of soaking grains and nuts. Buttermilk has numerous other health benefits on it own.

You will need:

2 cups whole wheat flour ( you can use sprouted wheat four)

2 cups buttermilk

2 eggs

1/2 teaspoon salt

1 teaspoon baking soda

1 tablespoon butter (melted for waffels)

Butter or Coconut oil for cooking

Method: Mix the flour and buttermilk in a mixing bowl and place a dishtowel over it for the night. You can leave this on the counter until the next morning. Add the rest of your ingredients, only add the butter for waffles.  Of course you can add butter on top of your cooked waffles or pancakes! Cook on a medium low heat. I prefer to use coconut oil, it adds a crispy edge to the pancakes/waffles.  These take a bit longer than traditional white flour pancakes/waffles to cook. You will need patience and serve with maple syrup and butter.
