Key to KALE Salad

Kale is all the rage and has been for a couple of years. Good news it is fabulously healthy for you but not everyone likes it raw. I see so many kale salads out there but they are NOT all created equal. TWO very simple steps help to soften kale and make it enjoyable in any salad. After I wash and dry my kale I cut out the stem & massage the leaves with oil of choice. The stem is never pleasant it is fibrous and has no taste. Massaging the leaves with oil sounds silly but it is not. It is a quick step, drizzle oil over leaves and squeeze or rub the leaves for a minute. Let them sit out while preparing the other ingredients for your salad or the rest of the meal. They will not go bad and really the longer they sit the softer the leaves get. Dress with vinegar and toppings of your choice. It will be a much more pleasant eating experience.

 

*To absorb all the nutrients in your veggies it is essential to have a fat catalyst. Cold pressed oils that are not processed are your best option for health.  Since there is no cooking here olive oil is a great option.
