Curried Chicken & Root Vegetables

 

It is winter and I am trying to shop local and seasonal. I chose to slow cook my root veggies with a tomato base and Tiki Marsala spice. We are following a Keto diet and so we ate this as is but it would be very enjoyable with rice or naan.

You will need:

1 large white onion

1 large rutabaga

2 turnips

2 tablespoons chopped garlic

1/4 cup tomato paste mixed with two cups warm water

3 tablespoons tiki marsala spice mix

1 teaspoon of cumin spice

5-6 chicken thighs

I layered my ingredients mainly for photos but I did mix all the ingredients together before I shut the lid to my slow cooker. I cooked mine for three hours. You could easily do this on the stove top. Start on low and let the tomato paste and water come to a simmer and turn to low. I do believe you have a high likelihood of burning. You will need to add water from time to time to prevent the bottom from burning. I love these meals that you throw everything in, mix, shut the lid, and walk away.  This could be put in a slow cooker for much longer ( put in the cooker for 5-6 hours while you are at work, and then it should keep warm in the cooker).
