Delicata is a winter squash that you can eat the skin. Winter squash has numerous health benefits and can be served in countless ways.
I love delicata because of the easy prep. Scrub the squash well and slice in rounds. You can leave the seeds in the center and cook with them in there or gently push them out. I put a layer of parchment paper on my cookies sheet since I am going to layer cheese on my squash and I wanted it to release easily.
You will need:
1 white onion sautéed with a tablespoon butter
1 delicata squash sliced into rounds 1/4-1/2 inch thick
parmesan cheese grated
4 ounces jack or other cheese of choice
I layer out a layer of parchment paper on a cookie sheet. Set the oven to 350 degrees. Spread out the ronde on the parchment paper. In each round add a tablespoon of sautéed onions and small square of cheese. Top with a teaspoon of parmesan and a dash of chili powder. I bake until crunchy and bubbly. The squash cooks very quickly and will be done before the cheese gets crunchy. It is up to you how bubbly and brown you want your cheese. Careful, they can burn quickly. My first batched was a little too dark but honestly still tasted delicious.
They go fast, in fact I do not have a picture of the final product because everyone grabbed one hot!
