Christmas Casserole

I made this for a weekend brunch I hosted and thought it would also make a lovely Christmas morning casserole. It is GF and Keto if you are interested or have guests with specific dietary needs.

 

You will need:

1 dozen eggs whisked with a table spoon heavy whipping cream & 2 tablespoons of Gochujang or Hot Sauce of your choice

4 ounces of cream cheese cut into 8 pieces

8 ounces cheese ( I used pepper jack) shredded

2 cups hash browns

1 onion thinly sliced in rounds or diced

Salt & Pepper

Saute onions in oil or butter until slightly browned.  Evenly distribute them on the bottom of a 9X13 glass baking dish. In the same pan that you sautéed the onions begin to sauté the hash browns on medium heat. They do not need to be crispy but cooked well and beginning to brown. When done layer the hash browns over the sautéed onions in the glass baking dish. Place a cube of cream cheese in the middle of where you think each square portion will be. It does not need to be perfect. Pour the whisked eggs/whipping cream/Gochujang gently over the sautéed onions and hash browns. Now evenly distribute the grated cheese all over the dish. Place in a 350 degree oven until fully cooked. When you look under the glass dish you should see bubbles distributed all over and not liquid at the bottom. It should be browned and bubbly on top as well. If you stick a knife in the middle of the dish it should come out clean. Mine took 45 minutes there about.

I served with fermented hot sauce and carrot-diakon radish-jalapeno ferment.
