Roasted Chicken Thighs, Cherry Tomatoes, & Broccoli

I love to make one dish meals during the week. My husband eats a ketogenic diet and overall I try to not eat sugar, wheat, and processed foods so it has not been to hard of an adjustment for my cooking.

This recipe can be altered very easily ; change up the protein, veggies, add spices and roast away!

You will need:

4-6 chicken thighs

1 onion

3-6 cloves garlic

1 head of broccoli

1 container of cherry tomatoes

Chop all the ingredients to bit size. Coat in oil of choice and sprinkle salt & pepper all over. Roast in a 350 degree oven for 30 minutes or until the chicken is thoroughly cooked. I prefer the broccoli to have a bit of a bite.
