Veggie Gratin

I was inspired by Jaque Pepin. I love the man. I took the last veggies of the fall and sliced them all into bit size rounds. I layered the with sliced of cheese and topped with parmesan. It took all of 15 minutes to throw together this dish. It looks very impressive but it very simple.

You will need:

yellow squash

zucchini squash

onion

tomato

cheese of choice ( cheddar, mozzarella, jack)

parmesan

basil ( chopped and saved for topping after baked)

After you assemble the dish place in a 350 degree oven. Should bake for about 45 minutes. The cheese should be melted and bubbly. The veggies should be cooked but a slight bit to them. I love fresh basil on top.

 

Now that it is winter I might suggest winter squash, potatoes, yams, onions, and/or root veggies.
