Cauliflower pizza is simply amazing!
I am astonished at how great it tastes. TRULY! No guilt associated with it either.
one head cauliflower
tomato paste or pesto
1 cup parmesan
cheese of choice 2 cups for toppings ( if you use fresh mozzarella dry it on a paper towel first)
sun dried tomatoes ( bringing back the fab food of the 80’s)
You can top with anything but less is better. Also, wet toppings such as fresh tomatoes or marinated artichokes you need to dry first or they could make the pizza soggy.
Grate your head of cauliflower on a box grater or in a food processor. Place in a microwave safe bowl and microwave for 5 minutes. Take out and mix with a fork to let the steam out and cool. You can place on a cookie sheet to cool faster but not necessary. When pretty cool wrap up in a towel and squeeze the day light s out of it to get all the water out. Sorry this part smells and immediately wash the towel or it will stink up your laundry. Cauliflower is good for you and an awesome substitute for less healthy foods but it kinda smelly. Nobody wants to sit next to the person reheating cauliflower in the lunch room, seriously.
Place the cooled and wrung out cauliflower in a bowl and add two eggs, the parmesan cheese, and spices of choice. ( I used a tablespoon oregano, garlic powder, cayenne, and salt and pepper).
Preheat the oven to 400 degrees. Place parchment paper on a a cookie sheet ( it is totally worth using parchment paper, trust me. It is seriously the only thing I use it for.)
Shape the cauliflower mixture into a round pizza or square or something crazy like a star. Doesn’t matter. Bake for 15-20 minutes until a bit golden. Take out and with a spoon spread tomato paste, then cheese, then toppings. Place back in the over until thoroughly melted. I let it sit for 5 minutes and then cut, serve, eat!d
