Momofuku Soy Sauce Eggs

I hard boiled eggs. Perfect Eggs.

In a pint mason jar I added 1/2 cup soy sauce ( you can use GF tamari or Braggs Aminos), 1/4 cup of rice vinegar, and 1 teaspoon of sugar. I peeled my four eggs and tucked them into the jar. You can use a weight to keep them under the liquid but I didn’t feel the need. It is recommend to leave in the jar for up to 6 hours. I left mine in for a couple of days. The texture elf the egg white became harder but the flavor intensified. I was having fun experimenting. I would recommend 6 hours to one day.

You can eat these as is or sliced atop soup, salad, rice, stir fry,…..
