Fig Salad

We stopped at a roadside stand along HWY 1 Sunday. I bought 10 avocados for $2.00 insane, but also this lovely basket of beautiful figs.

When I got home we wanted a lighter salad for dinner since we had indulged all weekend on our NO KIDS vacation.

You will need:

  • figs sliced in halves or quarters (6-9 figs)
  • kale 2 cups
  • red leaf lettuce 2 cups
  • feta1/2 cup crumbled
  • 1/4 cup parsley if you enjoy parsley
  • olive oil 2 tablespoons ( or more based on your personal preference)
  • 1/2 lemon juiced
  • salt & pepper
  • bacon fat ( or fat of your choice but the bacon fat I save from cooking bacon for my boys on the weekends, it adds a TON of flavor)

I washed and dried my greens and tossed them in a bowl. In a skillet I heated bacon fat ( 1 tablespoon). When hot, I put the fig pieces in seed side down. When they caramelized a bit and were heated through I took them out hot and added them to the greens. I then added the lemon juice, olive oil, salt & pepper, and feta. Lastly I tossed.
