Jacque Pepin Inspired Vegetables


I was watching KQED public television, as usual to wind down in the evening. I have been inspired by more French cuisine lately. I love to reinvigorate my cooking. With so many vegetables available at farmers market, Jacque and I, have been in the mood for VEG!

This a like a ratatouille but with my own twist. You can use anything you find at the market that is in season. Today I had green and yellow zucchini, tomatoes, onion, and mozzarella. I simply sliced the vegetables in simlar sizes but not to waste anything they are not perfectly round and lined up, I am not a resturaunt. I used very little cheese but felt a slice or three per row would help to hold it all together. I sprinkled parmesan, oregano, and pepper all over the top. I did not use any oil.

Bake in a 375 degree oven for 45 minutes covered in foil. Take the foil off and broil to brown the top ( watch carefully). This left the vegetables with a small bite, I don’t want them to be mushy. If you do just cook them for an hour.

At the last minute I finely chopped and sprinkled basil to serve.
