I have a lovely neighbor that shares fresh fruits and vegetables when they can’t eat them while they are still good. She gave me 8 fresh peaches. I also happened to have strawberries in my fridge so I added them in for color and contrast.
You will need:
6 peaches cut into thin slices
1 cup cut strawberries
1 teaspoon of cornstarch
1/4 cup sugar
1/2 a lemon juiced
Mix and set aside. I find that letting it sit for an hour lets the juices begin to run.
You will need for the topping:
2 cups flour
3/4 cup sugar
1 teaspoon baking powder
1 1/4-1 1/2 sticks of butter ( I find room temperature mixes in best)
Keep a cup of warm water near by in case the mix is not thoroughly coming together.
Mix all the ingredients with a fork. The hope is that the butter will combine with all the dry ingredients and look like corn meal. Add a touch of warm water if you need ( 1 teaspoon at a time). It is not going to ruin this dish either way.
Set the oven at 425 degrees. Put the fruit in the bottom of a baking dish. Cover all the fruit with the flour butter mix, try to cover evenly and thoroughly. Place in the oven for 2-30 minutes. You want it to be bubbly and beginning to brown on top. Serve warm or cold!
