Easy, if you an chop and use a can opener you are 75% there!
You will need:
3 ribs celery diced
1 red bell pepper diced
1 yellow bell pepper diced
1/2 large red onion diced
1/2 cup chopped cilantro
2 cloves garlic minced
1 jalapeño ( seeds removed) diced small ( or you can use canned green chilies)
1/2 cup oil ( olive or avocado)
1/2 cup red wine vinegar
2 cans black eyed peas ( drained)
Spiced up I chose: dash ( 1 tsp) chili pepper, cumin, salt, pepper, Mexican oregano.
Suggestion: change it up by adding frozen corn, black beans, can of diced tomatoes, ….
Mix and done! Best to let sit over night in the fridge!
