As I was scrolling on Facebook I saw these turkey dippers with avocado sauce on Nourishing Meal. I added my own twist but recipe recognition goes to Nourishing Meals. I love finding inspiration anywhere I can. This has no grains.
You will need:
- 1 lb ground turkey ( I used thigh)
- 1 large zucchini ( grated on a box grater)
- 1 small onion or half a medium onion (finely chopped)
- 1 egg
- salt & pepper
- 1 large avocado or two small
- 1 lime or lemon
- 2 tablespoons mayo or yogurt
- 1 teaspoon garlic powder
- red chili flakes ( up to your taste buds)
- salt and pepper to taste
In a large bowl mix the turkey, egg, onion, zucchini, and spices well. In a frying pan cover the bottom of the pan in oil, high heat oil is best. I used avocado oil but coconut would be good as well. Heat on medium high. I made little nuggets size scoops of the turkey mix and placed carefully in the pan. It will splatter so no children too close. I use a splatter top as well (metal mesh top that allows air in and out but the oil will not splatter out). Turn the heat down to medium low. When the turkey dippers are done cooking on one side they will release, that is when the spatula does not have to scrap to get them to lift. Flip, and it should only take another 1-2 minutes to cook the other side. I lay them on paper towels and sprinkle with salt.
Sauce: In a blender add all the ingredients. Blend well until smooth. You may need to add a tablespoon of water at a time to get the mixture to incorporate and blend.
I served these with a salad of romaine lettuce and pickled red onions. The avocado sauce made a great dressing for the salad as well!
