This salad is better and better as it sits on the table or in the fridge over night. Nothing to go bad in the sun or out at a party. It is VEGAN and everyone will love how filling and fresh it is!
You will need:
- One bag or 2 pounds of fingerling potatoes.
- One carton of cherry tomatoes or grape tomatoes.
- One pound green beans.
- Basil ( one bunch chopped roughly for blender)
- 1 lemon (juiced, rind if you love extra lemon)
- Garlic ( 2 cloves)
- Olive Oil
In a large pot boil potatoes for ten minutes. Drain and put hot into a bowl. Throw green beans into boiling water for 3 minutes. You want them still a bit crisp. Toss into bowl hot with potatoes. Add cherry tomatoes ( do not cook).
In a blender squeeze lemon juice, garlic, and 1/2 cup olive oil into blender (zest of lemon if you would like). Then put the basil on top. Blend, you will likely need to add up to a 1/3 cup more olive oil. If you prefer you can add water. Salt and pepper to taste and pour over veggies. Mix and plastic wrap the bowl. Let the steam and sauce do its thing. You can leave out if you are eating soon or taking to a party. You can also refrigerate. I suggest letting it get to room temperature before eat, you can taste the flavors best this way!
