BEST dinner last week!

I am always trying to match foods up with fermented accompaniments to make dinner yummy and healthy! This was a huge winner and incredibly easy.

Smashed potatoes with Spicy Fermented Daikon Radish & Carrot Relish

Pineapple Sausage with Fermented Jalapeños

Cabbage Slaw with Pickled Onions

You will need:

12-15 small dutch potatoes or fingerlings ( boiled for 10 minutes until soft all the way through)

half a head of cabbage (thinly sliced)

3 celery ribs (thinly sliced)

Feta cheese ( 1/4 cup feta cheese)

fresh cilantro

Olive oil or other oil such as avocado oil ( I would not recommend coconut oil here but Ghee would be yummy)

Fermented Goodies in my Fridge: Pickled Red Onions ( 1/2 cup) , Fermented Jalapeños, and Spicy Fermented Daikon & Carrot Relish

Potatoes: I let the potatoes cool on the counter once boiled. I cover a cookie sheet with foil and oil generously. I spread the potatoes out well and then take a heavy bottom glass and gently put pressure on each potato to smash them 1/2 an inch flat. I oil the tops and generously sprinkle pepper and salt. I place them in a 400 degree oven until golden and flip to crisp the other side.

Sausage: They are fully cooked but to heat I put in a small pan with a lid. I add in a 1/4 cup water and bring to a boil. The sausages puff up and you can see the juices boiling inside.

Salad: Mix the very thinly sliced celery, cabbage, chopped cilantro ( I love cilantro and used a half cup but that is a lot, I recommend a 1/4 cup). Mix thoroughly and add in 1/2 cup pickled onions, 1/4 cup feta cheese,  and dressing. I used my favorite Bragg Apple Cider Vinaigrette. They do have a ginger sesame that would pair well with this as well!

When I served this lovely and very quick meal my husband and I paired the jalapeños on top of the sausage and the daikon relish on top of the potatoes.
