Zucchini & Meatballs

I have been feeling a bit Crohn’s-y lately so I am cutting anything that causes inflammation for me.

Tonight I decided to make zucchini noodles with marinara and meatballs.

You will need:

*1 lb. meat ( I used grass-fed beef)

*2 eggs

*5 basil leaves minced

*2 garlic cloves minced

*1/4 cup parmesan

*1/2 cup almond meal

*pinch of salt, pepper, and red chili pepper flakes

*2 large zucchini

*jarred, frozen, fresh marinara

I used a Spiraler. One of your choice is worth it if you choose to add GF noodles regularly to your meals. They are great for apples and veggies in salads as well!

Method:

Mix the meat, eggs, parmesan, basil, almond meal, garlic, salt, pepper, and chili pepper flakes. They will be looser then meatball mix using breadcrumbs but make little balls and put into a glass baking dish. Put into a 400 degree oven for 25-30 minutes.

Pile the raw noodles in a bowl, top with hot sauce and meatballs. Sprinkle with parmesan cheese and let sit for three minutes before serving. This allows the noodles to warm to the sauce temperature.
