These are raw pecan, almond, date, chocolate cookies rolled in coconut!
My son is obsessed with chocolate. He literally wakes up and asks for chocolate. NO, he doesn’t get chocolate for breakfast (usually). I wanted to make a dessert that had no gluten ( not because he can’t have it but because he already has too much of it!) These pack a nutritious punch with protein, no sugar, no gluten, and lots of potassium from the dates.
You will need:
*1/2 cup almonds & 1/2 cup pecans (you can use what ever nuts you prefer or even seeds)
* 1/2 tsp raw cocoa ( this is for kids and adults so low caffeine but if they are made for adults and you are wanting a caffeine punch use a 1/4 cup raw cocoa)
*1 cup cut up and pit removed dates ( Medjool)
*1/2 teaspoon of salt
*1 teaspoon vanilla
*1 tablespoon chia seeds ( if you want the extra nutrition but not necessary)
*1 cup chocolate nibs or chocolate chips or carob chips
*1 tablespoon coconut oil (optional)
*1-3 tablespoons water
* peanut butter (optional, I usually add but did not this batch)
*shredded (unsweetened) coconut
Place nuts, salt, vanilla, raw cocoa, chocolate nibs, and chia seeds in blender.
Pulse until all ingredients chopped into a rough paste.
Add in chopped (and pitted) dates and coconut oil. You will need to add 1 tablespoon of water at a time until you get a paste that smoothly moves in the blender but not wet.
I use coconut oil to spray on my hands as I take a spoonful of mix and roll it in my hands to make a ball. This way the mix doesn’t stick to my hands.
Have ready a plate with shredded coconut in a thin layer all over. I use one cup at a time. I think total I used a cup but had to add more to coat the balls and what I did not use I put back in the bag.
Roll balls around in the coconut.
Put into a sealable container and refrigerate. They will hold their form better if you refrigerate for at least an hour.
