Greens to go with your perfectly cooked eggs!
You will need:
*1 bunch chard or kale or mustard greens ( your choice) cut into thin strips and disregard the stem
*1 cup cherry tomatoes cut in half
*1 small onion or half of a large onion diced
*1 cup shredded potatoes ( I used frozen)
*2 tablespoons butter or oil of choice
I highly recommend a cast iron skilled but any pan will do. Sauté the onions in butter over medium heat. Add in the rest of the ingredients when the onions are beginning to brown and turn the heat down slightly between medium and low. Go ahead and add in the frozen shredded potatoes. They will thaw immediately. All together it should take 25-30 minutes.
