Sautéed Greens and Mashed Beans

You will need:

* 4 cups navy or cannellini beans ( fresh, canned or previously cooked and frozen)

*1 onion diced

*1 bell pepper diced

*1 cups mushrooms sliced

*4 cups greens of your choice (pictured are mustard greens)

*2 cloves garlic minced

*4 tablespoons of butter

*2 sausages sliced ( I used already cooked sausages, if raw cooking time would take a bit longer)

Sauté onions, mushrooms,sausage, and bell peppers in 2 tablespoons of butter or oil of choice. I use butter since I am not using a high temperature to sauté. When onions are translucent add garlic. Pile on the greens and cover with a lid. Often adding a tablespoon of water can get things steaming quickly. You want the greens to be very wilted, cooking times vary based on the green. Mustard greens, kale, and cabbage will take longer then spinach, arugula, or baby greens.

In another shallow pan melt 2 tablespoons butter and add in the beans. My previously frozen beans had onion and carrots in them. Not necessary for this recipe. When the beans are heated I mashed with a handheld masher. ( If you puree the beans they get loose the thicker consistency that goes with the greens.)

To plate, I smothered the plate with the mashed beans and then add the sautéed greens and sausage on top.
