Soaked Pancakes

I know I know it may seem like I just try to make things more difficult but with minimal planning you can have nutritious and yummy foods.

My kids love pancakes and waffles. I am not a huge fan of sweets in the morning. I got in the habit of mixing my flour with yogurt the night before to soak the wheat and make it much more nutritious. I use grass-fed butter and real maple syrup. One son will happily accept fruit on his place the other does not.

You will need:

*2 cups flour

*2 cups yogurt, or kefir, or buttermilk

*2 eggs

*1/2 teaspoon salt

*1 teaspoon baking soda

*2 tablespoon coconut oil or butter

*1 teaspoon vanilla

Mix 2 cups flour and 2 cups yogurt in a bowl. Cover with a tea towel and leave out on the counter overnight.

In the morning add egg, salt, baking soda, vanilla, and coconut oil ( butter). Mix until combined and let sit for a five minutes.

I use this for waffles or pancakes. I always grease the pan with coconut oil.Coconut oil is a good fat that is highly digestible and make the waffles extra crispy! If the batter is too thick for your liking you can add milk, water, or buttermilk.
